This past weekend was b.u.s.y! But I was able to wind down Sunday night, with a few girlfriends and have a girls night in. It was the perfect way to end a hectic weekend.
I knew I wanted to make something tasty but also fresh, light and well, easy. I like to entertain and I love to cook but I didn't want to spend all day prepping...
...Enter flatbreads! I've become slightly obsessed with flatbreads, in general. Their like pizza, obviously; but more thin and I feel like you can get more creative with flat bread for some reason. Plus, these were way easy to make.
I opted for two flatbreads with the gals. The first one, I adapted from this recipe, here
Chicken Alfredo with Spinach & Feta:
Flatbread (I went with naan, but you can use any flatbread)
Alfredo sauce; just enough to coat as a base
Fresh baby spinach leaves
Chicken (I cut up a few chicken breast tenders and sauteed in olive oil)
Caramelized onions (just saute sliced onions until they well, caramelize)
Feta cheese
Olive Oil (to brush the edges with)
Garlic Salt *optional (I just love garlic)
Brush edges of bread with olive oil. Layer all ingredients on flatbread and cook in a 400 degree oven for 12-14 minutes
The other creation, I opted for was a pepperoni/mozzarella combo.
Simple, classic, easy.
Classic pepperoni & mozzarella:
Naan Flatbread
Tomato sauce (I used a plain ol' can of Hunts tomato sauce)
Basil & Oregano (to add to the above sauce and/or as a topping)
Mozzarella cheese
Pepperoni
Olive Oil (for the edges, again)
Brush edges of bread with olive oil. Layer all ingredients on flatbread and cook in a 400 degree oven for 12-14 minutes.
I also added a salad to the menu (just your regular salad, kids. Nothing picture worthy) and of course, wine. It was a great way to wind down with my girlfriends and catch up a bit. Sometimes a night in like that, is just what your soul needs!
