Chicken Parmesan {a recipe}

In my immediate family, my mom is a seriously wonderful cook. But being the oldest and helping with dinner growing up, I do have some specialties of my own amongst the fam. Chicken parm is one of my winners. When we eat together for birthdays or other occasions {Mothers' Day}, usually my mom will request my sister's chicken marsala and all the boys will request my chicken parmesan {should I be offended by that? I'm totally not}.

My brother came over last week just 'cause, though I may have bribed him with my chicken parmesan.

Josh and I are both trying to lose weight and while I love the original version I make {lightly fried in olive oil and then baked to crispy perfection}, I decided to lighten it up a bit. The only two things I really had to do were, cut the breasts in half {portion control} and bake, instead of fry.

My brother had seconds, so I'd say the lighter version was a success!


Baked Chicken Parmesan {serves six}

Ingredients:
  • 3 boneless chicken breasts, halved and pounded thin
  • 3/4 cup seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 eggs {you will really only need a little over 1, but it's okay to have extra}
  • 1/2 cup shredded mozzarella cheese {you can use whole slices; whatever floats your boat}
  • 3/4 - 1 cup tomato/marinara sauce

Combine breadcrumbs and parmesan cheese in one bowl. In another bowl, crack eggs and slightly scramble for an egg wash. Gently dip chicken into egg, then dip into breadcrumb mix. Place on a baking sheet {if your pan is NOT a non-stick, make sure to use a little cooking spray beforehand}.


Bake at 400° 30-35 minutes {in between this time, you can flip the chicken half way through to cook both sides evenly}. Remove from oven, place tomato sauce on top of each piece and add cheese. Bake an additional 5 minutes, allowing cheese to meet. Enjoy!
