Chocolate Chip Cookies {a recipe}



On Saturday, Caroline hosted a few Tampa Bay Bloggers for a cookie exchange. I have to preface this post with saying that baking is not my thing, whatsoever. I love cooking, I love to make {and eat!} savory dishes. Sweet treats where the measurements have to be precise have somewhat always scared me.

I scoured the interwebs for the perfect recipe, until I realized I was overthinking it. Keep it simple, right? My personal fave when it comes to a cookie is none other than the classic chocolate chip.

A lot of my fellow blogger pals are doing a no sugar, no grains challenge, and I myself am always trying to lighten up a recipe, in my own attempt to lose weight. So when I tried this recipe, I knew I had a winner; replacing white flour for organic whole wheat, sugar free applesauce for butter, and Kelapo coconut oil {a local Tampa business!} instead of vegetable oil. While this modified version wasn't completely sugar free, it wasn't as sweet as a mass produced cookie you find in a bakery, or the cookie aisle of your local grocery. I promise these are still delish! I tested this recipe out at our Ugly Sweater Party, last week and they were a hit.

My cookies even won best tasting at Caroline's exchange. After we all first voted for her cinnamon raisin bites, however.



Whole Wheat Chocolate Chip Cookies

Ingredients:

1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup room temperature organic virgin coconut oil
1/4 cup unsweetened applesauce
1/4 cup splenda brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoons vanilla extract
1 cup chocolate chips

To make:

Preheat the oven to 375°F. Line large baking sheets with parchment paper or silicone baking mats.

In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

In the bowl of an electric mixer, beat the coconut oil, applesauce, brown sugar, and granulated sugar until well combined. Beat in the egg and vanilla. On low speed, gradually beat in the flour mixture. Stir in the chocolate chips.

Drop by rounded tablespoons onto the prepared baking sheets. Bake for 12 minutes, or until light brown. Let cool on wire racks. Makes approx 24 small cookies.
