breakfast "muffins" {a recipe}

If I don't plan my breakfast and lunch during the work week, ahead of time, I.don't.cook. Meaning, naturally, I eat out. Spending more money than I need to for the week and shoving a lot more bad ish into my piehole.

Hubs generally eats low carb; I don't really know how I am eating lately {I go between low calorie and low carb, but can't find the right balance-yet} and we both like eggs.

Enter: "muffins".


Adapted from here {but I couldn't find exact measurements or serving size, so I had to improvise a bit}



Breakfast "Muffins" {makes ten small muffins}

Ingredients:
  • 6 eggs
  • 1/4 package breakfast sausage
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup cottage cheese
Begin by frying the sausage, breaking it into as small, bite sized pieces. Cook completely until no pink remains, and set aside to let cool completely.


Crack eggs into a bowl and gently scramble.   After, pour in cooled sausage, shredded cheese, and cottage cheese.  Mix {all}  together well. Then spoon into muffin tins--I use my Pampered Chef Brownie Pan because I like them square {and my round muffin tin only holds six}

Bake muffins at 325-350 for about 30 minutes or until cheese is browning and bubbly and egg is complete cooked through.


I love this versatile recipe! You can improvise, add more or less and use whatever you like. These muffins are a hit at Casa de Crews. Enjoy!

    1. I stored in the fridge and made a 2nd batch to freeze, both held well :)

    1. They do! When I reheat, I like to do so in the toaster oven, though. I think the microwave sort of ruins the texture after being frozen. Enjoy!
